When it comes to U.S. ski towns, you would be hard pressed to find a stronger food and beverage scene than Aspen, Colorado. To sample all the dining options this busting mountain town has to offer, it would realistically take a full winter season (or even longer)!

It’s not surprising that more spots get added into the mix every year, including these two buzzworthy spots that help make Aspen live up to its hype:

CHICA Aspen

Opened in late 2021, CHICA – led by celebrity chef Lorena Garcia – uniquely pairs Latin American cuisine with excellent cocktails and wine. The Latin American influence is palpable in the vibrant interior, complete with a beautiful bar that serves excellent margaritas.

The dishes draw inspiration from many Latin American countries, including Venezuela, Peru, Brazil, Mexico and Argentina. If you’re heading there to dine, make sure to order the Blistered Street Corn made with cotija cheese, chipotle, lime and Fresno Chile; and the Roasted Meat Parrillada, a variety of meats roasted with blistered sweet peppers, chimichurri, aji amarillo and habanero relish.

The best part about CHICA is its stunning patio and outdoor bar that backs up to the slopes – après ski anyone? CHICA is an obvious choice for anyone looking for stunning mountain views with a side of excellent cuisine.

 

PARC Aspen

When owners Maryanne and Harley Sefton began conceptualizing PARC Aspen, they envisioned a park-like space in the heart of downtown, where locals and visitors could come together to bond over a delicious meal.

In late 2022, PARC opened its doors, and their vision became a reality. This modern take on a farmhouse restaurant offers guests contemporary dishes made from local, sustainable ingredients. The menu, which is expertly curated by executive chef Mark Connell, offers a seasonal selection of mouth-watering appetizers, first courses, mains and sides. Guests can also enhance their dining experience with a classic cocktail, such as a Colorado Mule; or a specialty drink such as the Parc Aspen G&T, a twist on a gin and tonic made with strawberry, pink peppercorn and rosemary.

PARC Aspen provides an enjoyable fine-dining experience that values both the locals and visitors alike, which is especially refreshing in a ski town where locally owned establishments are becoming harder to find every year
